Ingredients
- 1.5 cups shredded phyllo or kataifi pastry
- ¾ cup mozzarella or white cheddar cheese, shredded
- 4 tbsp butter
- ½ cup honey
- ¼ cup pistachios, roughly crushed
- 2 tbsp water

Heat butter in a 10-inch skillet over medium-high until foaming, about 60 seconds.

Toss pastry with your fingers to coat evenly in melted butter, then press into the skillet as a thin, even layer.

Cook 3 minutes without stirring until the base is golden and crispy, then add shredded cheese on top.

Cook 2 more minutes until cheese melts and edges pull away from the pan slightly.

While it cooks, warm honey and water in a small saucepan over low heat until steaming, about 90 seconds.
