Ingredients

  • 1.5 cups shredded phyllo or kataifi pastry
  • ¾ cup mozzarella or white cheddar cheese, shredded
  • 4 tbsp butter
  • ½ cup honey
  • ¼ cup pistachios, roughly crushed
  • 2 tbsp water

Instructions

    Heat butter in a 10-inch skillet over medium-high until foaming, about 60 seconds.

    Toss pastry with your fingers to coat evenly in melted butter, then press into the skillet as a thin, even layer.

    Cook 3 minutes without stirring until the base is golden and crispy, then add shredded cheese on top.

    Cook 2 more minutes until cheese melts and edges pull away from the pan slightly.

    While it cooks, warm honey and water in a small saucepan over low heat until steaming, about 90 seconds.

    Slide künefe onto a plate, drizzle hot honey all over, scatter pistachios on top, and eat immediately.
