Ingredients
- 1.5 cups shredded phyllo dough (kataifi)
- ¾ cup mozzarella cheese, shredded
- ½ cup honey
- ¼ cup water
- ⅓ cup pistachios, chopped
- 3 tbsp butter

Warm honey and water together in a small pot over low heat, stirring once. Remove from heat and set aside.

Melt 1.5 tbsp butter in a 10-inch skillet over medium-high heat until foaming, about 60 seconds.

Add half the phyllo dough and stir constantly until golden and crispy, breaking up clumps, ~2 minutes.

Scatter mozzarella over the phyllo, press gently, then top with remaining phyllo and remaining butter. Stir and cook until cheese melts and phyllo crisps, ~1.5 minutes.
