Ingredients
- 1.5 cups shredded phyllo dough (kataifi)
- 3 tbsp butter
- ¾ cup white cheese (feta or mozzarella), crumbled
- ½ cup simple syrup (equal parts sugar and water, heated until combined and cooled)
- 3 tbsp roasted pistachios, chopped
- 2 cups sliced watermelon, melon, and peaches (mixed fresh fruit)

Heat butter in a 10-inch skillet over medium-high until foaming, about 60 seconds.
