Ingredients

  • 1.5 cups shredded phyllo dough (kataifi)
  • 3 tbsp butter
  • ¾ cup white cheese (feta or mozzarella), crumbled
  • ½ cup simple syrup (equal parts sugar and water, heated until combined and cooled)
  • 3 tbsp roasted pistachios, chopped
  • 2 cups sliced watermelon, melon, and peaches (mixed fresh fruit)

Instructions

    Heat butter in a 10-inch skillet over medium-high until foaming, about 60 seconds.

    Add shredded phyllo, stirring constantly, until golden and crispy, about 5 minutes.

    Scatter crumbled cheese over the phyllo and stir until starting to melt, 90 seconds.

    Slide onto a serving plate and immediately pour cool syrup over the top.

    Top with chopped pistachios. Arrange fresh fruit on the side of the plate.

    Pour cold milk over the kunefe just before eating and serve immediately.
