Ingredients
- 1 cup tapioca starch (polvilho azedo or regular)
- ½ cup whole milk
- 1 cup sharp white cheddar, coarsely grated
- 1 whole large egg
- 8 pieces store-bought frozen croquettes (potato & cheese or ham)
- 6 pieces store-bought frozen kibes (meat-filled)
- 2 cups neutral oil for frying
- ¼ cup Parmesan, finely grated (for topping)

Preheat oven to 400°F. Heat milk in a small pot until steaming, then pour over tapioca starch in a bowl.
