Ingredients

  • 3.5 cups all-purpose flour
  • 2 tsp instant yeast
  • 1 tbsp sugar
  • 1.5 tsp salt
  • 1.25 cups warm water (110°F)
  • ½ cup baking soda (for boiling bath)
  • 2 tbsp butter, melted
  • 1 tbsp coarse pretzel salt or sea salt

Instructions

  1. 1

Mix flour, yeast, sugar, and salt in a large bowl.

  2. 2

Add warm water and stir until a shaggy dough forms. Knead for 2 minutes.

  3. 3

Cover with a damp towel and let rise for 15 minutes at room temperature.

  4. 4

Divide dough into 8 equal pieces. Roll each into a 16-inch rope.

  5. 5

Form each rope into a pretzel: loop the top, cross the ends, then fold down onto the loop.

  6. 6

Bring 8 cups water and baking soda to a boil in a large pot.

  7. 7

Boil each pretzel for 30 seconds per side, then place on a parchment-lined baking sheet.

  8. 8

Preheat oven to 450°F while pretzels finish boiling.

  9. 9

Brush each pretzel with melted butter. Sprinkle coarse salt on top.

  10. 10

Bake for 12-14 minutes until golden brown and set.

  11. 11

Cool on a wire rack for 5 minutes before serving.
