Ingredients

  • 1.5 tsp baking powder
  • ¾ cup warm water
  • 1 cup sharp cheddar, shredded
  • 3 tbsp chili crisp (Calabrian or shop-bought)
  • ½ cup neutral cooking oil
  • ¼ cup sour cream or Greek yogurt
  • 2 tbsp fresh cilantro, roughly chopped

Instructions

    Mix flour, baking powder, and a pinch of salt in a bowl, then add warm water and stir until a soft dough forms.

    Heat oil in a 12-inch skillet over medium-high until it shimmers and a drop of dough sizzles on contact, ~3 minutes.

    Divide dough into 4 balls, then flatten each into a thin oval. Stuff each with a handful of cheddar, fold, and seal edges.

    Fry vetkoeks 2–3 minutes per side until deep golden brown and puffed. Transfer to a paper-towel-lined plate.
