Ingredients

  • ½ cup butter, softened
  • ½ cup granulated sugar
  • 1 large egg yolk
  • 1 cup all-purpose flour
  • ¼ tsp fleur de sel or sea salt
  • 1 large egg white, lightly beaten

Instructions

    Cream butter and sugar together in a bowl until pale and fluffy, about 2 minutes.

    Stir in the egg yolk until combined, then fold in flour and salt until a dough just comes together.

    Roll dough between two sheets of parchment into a thin 1/8-inch rectangle, then chill 5 minutes.

    Cut into 2-inch squares, place on a parchment-lined sheet pan, and brush the tops with beaten egg white.

    Sprinkle a tiny pinch of fleur de sel on each square, then bake at 375°F for 8–10 minutes until golden.
