Ingredients
- 1 can (5 oz) crispy chow mein noodles (canned, drained)
- ⅓ lb shrimp, peeled and deveined
- 1 cup rotisserie chicken, shredded
- 2 tbsp fish sauce
- 1 whole lime (juiced)
- 1 tbsp granulated sugar
- 3 whole scallions, sliced thin (green + white parts)

Whisk fish sauce, lime juice, sugar, and 2 tbsp water in a small bowl until sugar dissolves. Set aside.

Heat 2 tbsp oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

Add shrimp and cook without stirring for 90 seconds, then flip and cook 60 seconds more until opaque throughout.

Add chicken and crispy noodles, tossing constantly for 1 minute until heated through.
