Ingredients
- 4 links (about 8 oz) cooked boudin sausage links
- 12 wrappers wonton wrappers
- 3 cups neutral cooking oil, for frying
- ½ cup creole remoulade or hot sauce
- 1 whole lemon
- 4 leaves butter lettuce or iceberg leaves

Cut each boudin link into 3 pieces. Place one piece in the corner of a wonton wrapper and roll tightly, tucking corners as you go until sealed.

Heat oil in a heavy saucepan or deep skillet to 350°F. Test with a wooden spoon handle—bubbles should rise steadily around it.

Fry egg rolls in batches of 4, turning once, until golden brown on all sides, about 2–3 minutes total. Don't crowd the pan.
