Ingredients

  • 4 links (about 8 oz) cooked boudin sausage links
  • 12 wrappers wonton wrappers
  • 3 cups neutral cooking oil, for frying
  • ½ cup creole remoulade or hot sauce
  • 1 whole lemon
  • 4 leaves butter lettuce or iceberg leaves

Instructions

  1. 1

Cut each boudin link into 3 pieces. Place one piece in the corner of a wonton wrapper and roll tightly, tucking corners as you go until sealed.

  2. 2

Heat oil in a heavy saucepan or deep skillet to 350°F. Test with a wooden spoon handle—bubbles should rise steadily around it.

  3. 3

Fry egg rolls in batches of 4, turning once, until golden brown on all sides, about 2–3 minutes total. Don't crowd the pan.

  4. 4

Transfer to a paper towel–lined plate to drain. Serve hot with remoulade, lemon wedges, and lettuce leaves on the side.

Tools you’ll need

  • cutting board and knife
  • heavy saucepan or 3-quart deep skillet
