Ingredients
- 12 oz cooked boudin sausage, squeezed out of casing
- 8 count egg roll wrappers
- 2 cups neutral oil for frying
- ½ cup mayonnaise
- 3 tbsp hot sauce (Frank's or similar)
- 1 clove garlic, minced

Stir mayo, hot sauce, and minced garlic in a small bowl. Set the dipping sauce aside.

Place 1.5 tbsp boudin in the center of an egg roll wrapper. Wet the edges with water, fold two opposite corners toward the center, then roll tightly into a cylinder.
