Ingredients

  • 12 oz cooked boudin sausage, squeezed out of casing
  • 8 count egg roll wrappers
  • 2 cups neutral oil for frying
  • ½ cup mayonnaise
  • 3 tbsp hot sauce (Frank's or similar)
  • 1 clove garlic, minced

Instructions

    Stir mayo, hot sauce, and minced garlic in a small bowl. Set the dipping sauce aside.

    Place 1.5 tbsp boudin in the center of an egg roll wrapper. Wet the edges with water, fold two opposite corners toward the center, then roll tightly into a cylinder.

    Heat oil in a heavy skillet over medium-high until it shimmers and reaches 350°F, about 2–3 minutes.

    Gently slide 3–4 egg rolls into the hot oil. Fry without moving until all sides are deep golden brown, about 4 minutes total.

    Transfer to a paper-towel-lined plate. Repeat with remaining egg rolls in a second batch.
