Ingredients

  • 8 oz cooked boudin sausage, finely chopped
  • 8 count egg roll wrappers
  • 2 cups neutral cooking oil, for frying
  • ½ cup hot sauce (Frank's or cayenne-forward)
  • 2 tbsp butter
  • 1 cup cherry tomatoes, halved

Instructions

    Spoon about 1 tbsp chopped boudin onto each egg roll wrapper's corner, leaving edges dry.

    Fold corner over filling, tuck sides in, then roll tight and seal edge with a dab of water.

    Heat oil in a heavy skillet over medium-high until a wrapper piece sizzles immediately when dropped in.
