Ingredients

  • ¾ lb cooked boudin sausage
  • 8 count egg roll wrappers
  • ¼ cup mayonnaise
  • ½ tsp cajun seasoning
  • ½ tbsp fresh lemon juice

Instructions

    Slice boudin into 3-inch lengths. Mix mayo with cajun seasoning and lemon juice in a small bowl.

    Lay an egg roll wrapper corner-side up. Place one boudin piece in the center, fold bottom corner over, then fold sides in.

    Roll tightly toward the top corner, dab the tip with water, and press to seal. Repeat with remaining wrappers and boudin.

    Preheat air fryer to 380°F. Coat egg rolls lightly with cooking spray.
