Ingredients

  • 1.5 cups masa harina (corn flour for tortillas)
  • 1 cup warm water
  • 1 can (15 oz) canned refried beans
  • ½ cup queso fresco, crumbled
  • ¼ cup pickled jalapeños, sliced
  • 2 tbsp fresh cilantro, chopped
  • 1 whole lime (cut into wedges)
  • 3 tbsp vegetable oil for frying

Instructions

    Mix masa harina with warm water until a soft dough forms, about 2 minutes of stirring. Let it rest 3 minutes.

    Divide dough into 6 equal balls. Flatten each between two plastic sheets (or plastic bags) into a 3-inch round, then pinch up the edges to form a shallow cup.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds. Slide 3 sopes into the pan.

    Fry for 2-3 minutes per side until golden brown and crispy. Transfer to a plate and repeat with remaining sopes.
