  • 3 whole ripe bananas
  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • ¾ cup club soda or sparkling water
  • ⅓ cup sweetened condensed milk
  • 2 cup neutral oil (for frying)
  • ½ whole lime
  • ⅓ cup granulated sugar

    Peel bananas and slice on the bias into 1/2-inch-thick ovals. Set aside.

    Whisk flour, cornstarch, and a pinch of salt in a bowl. Pour in club soda and stir until smooth batter forms.

    Heat oil in a 12-inch skillet over medium-high until a wooden chopstick dropped in sizzles immediately, ~2 minutes.

    Working in batches, coat banana slices in batter and fry 90 seconds per side until golden and crispy. Transfer to paper towels.

    In a small saucepan, whisk sugar with 2 tablespoons water over medium heat until amber caramel forms, ~4 minutes. Remove from heat and stir in condensed milk.
