Ingredients
- 6 strips bacon strips
- 8 large eggs
- 1 cup sharp cheddar, shredded
- ¼ cup heavy cream
- ½ medium yellow onion, diced
- 1 tbsp fresh thyme (or chives), chopped

Heat a 10-inch cast iron or nonstick skillet over medium-high. Cook bacon until crispy, about 6 minutes, then chop and set aside.

Pour off all but 1 tbsp bacon fat. Sauté diced onion until soft and golden, about 3 minutes.

Whisk eggs with cream, salt, and pepper in a bowl until smooth. Stir in cheese, bacon, and thyme.

Pour egg mixture into the skillet with the onion. Stir gently to distribute, then smooth the top.

Transfer skillet to a 375°F oven (or broiler). Bake until edges are set but center still jiggles slightly, 7–8 minutes.
