Ingredients

  • ¾ lb pork tenderloin fillets
  • 8 oz mushrooms, sliced
  • 1 whole shallot, minced
  • ½ cup dry white wine
  • ½ cup heavy cream
  • 1 tbsp Dijon mustard
  • 2 sprigs fresh thyme

Instructions

    Pat pork dry, season generously with salt and pepper on both sides.

    Heat 1 tbsp butter in a 12-inch skillet over medium-high until foaming. Sear pork 2 minutes per side until golden brown. Transfer to a plate.

    Add mushrooms and shallot to the skillet, cook until mushrooms soften and liquid evaporates, about 4 minutes.

    Pour wine into the skillet, scraping up any browned bits. Simmer until reduced by half, about 2 minutes.

    Stir in cream, mustard, and thyme. Slide pork back into the pan and simmer until pork reaches 145°F, about 2 minutes.
