Ingredients
- ¾ cup creamy peanut butter
- 3 tablespoons rice vinegar (or lime juice)
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup or honey
- ¼ cup warm water
Instructions
- 1
Scoop the peanut butter into a medium bowl, breaking it into 3 or 4 pieces with the back of a spoon to make it easier to mix.
- 2
Pour in the rice vinegar, soy sauce, and maple syrup, then whisk continuously in the same circular direction until the peanut butter and liquid are completely combined and smooth with no streaks, about 1 minute.
- 3
Add the warm water slowly while whisking continuously until the sauce reaches the consistency of thick poured cream — it should slide off a spoon but still coat it generously, about 1 minute.
- 4
Taste the sauce and adjust: add more soy sauce for saltiness, more vinegar for tang, or more water if it is too thick.
- 5
Transfer the sauce to a serving bowl and serve immediately, or cover and refrigerate for up to 5 days; thin with a tablespoon of warm water if it thickens after sitting.
