Ingredients
- 2 lbs mussels, cleaned and debearded
- 2 medium shallots, minced
- ¾ cup dry white wine
- ½ cup heavy cream
- 2 tbsp fresh parsley, chopped
- 2 tbsp butter

Melt butter in a large pot over medium heat. Add shallots and cook until softened and fragrant, about 2 minutes.

Pour in white wine, then add mussels. Cover and increase heat to medium-high.

Steam mussels for 5–6 minutes, shaking the pot once halfway through, until shells open.

Discard any unopened mussels. Stir in cream and a pinch each of salt and pepper.

Simmer uncovered for 1 minute, then remove from heat and stir in parsley.

Divide mussels and broth between two bowls. Serve immediately with crusty bread.
