Ingredients

  • 12 oz penne pasta
  • 10 oz Italian sausage, bulk
  • 10 oz cremini mushrooms, halved
  • ½ cup heavy cream
  • ½ cup dry white wine (or chicken broth)
  • ½ cup Pecorino Romano, grated
  • 1 medium shallot, minced
  • 1 tbsp fresh thyme leaves

Instructions

    Boil penne in salted water until al dente, about 10 minutes; reserve 1 cup pasta water before draining.

    While pasta cooks, heat a 12-inch skillet over medium-high heat and brown sausage, breaking it into pieces, until no pink remains, ~5 minutes.

    Add minced shallot to the sausage and cook 1 minute until fragrant; add mushrooms and thyme, sauté until golden, ~4 minutes.

    Pour in wine, scrape up browned bits, and simmer 2 minutes; stir in cream.

    Add cooked penne to the skillet, toss gently, and stir in cheese; if too thick, loosen with reserved pasta water one splash at a time.
