Ingredients
- 12 oz penne pasta
- 10 oz Italian sausage, bulk or casing removed
- 10 oz mixed mushrooms (cremini, shiitake, button), sliced
- ¾ cup heavy cream
- ½ cup dry white wine or chicken broth
- ½ cup parmesan cheese, grated
- 1 small shallot, minced
- 1 tbsp fresh thyme or Italian parsley (chopped)

Boil penne in salted water until al dente, ~10 minutes. Reserve 1/2 cup pasta water, then drain.
