Creamy Mushroom Penne with Sausage

Ingredients

  • 12 oz penne pasta
  • 10 oz Italian sausage, bulk or casing removed
  • 10 oz mixed mushrooms (cremini, shiitake, button), sliced
  • ¾ cup heavy cream
  • ½ cup dry white wine or chicken broth
  • ½ cup parmesan cheese, grated
  • 1 small shallot, minced
  • 1 tbsp fresh thyme or Italian parsley (chopped)

Instructions

    Boil penne in salted water until al dente, ~10 minutes. Reserve 1/2 cup pasta water, then drain.

    Heat a large skillet over medium-high. Add sausage, breaking it apart with a spoon, until browned with no pink, ~6 minutes. Drain excess fat if needed.

    Add sliced mushrooms and minced shallot. Sauté until mushrooms soften and release liquid, ~4 minutes.

    Pour in wine and cream. Scrape up any browned bits. Simmer 2 minutes until slightly thickened.

    Stir in cooked pasta, parmesan, and reserved pasta water. Toss until creamy and sauce coats noodles, ~1 minute.
