Ingredients
- 8 oz penne pasta
- 1 lb shrimp, peeled and deveined
- ¾ cup heavy cream
- ½ cup canned diced tomatoes
- 2 tsp cajun seasoning
- ½ cup parmesan cheese, grated
- 2 tbsp green onions, sliced

Boil penne in salted water until al dente, about 9 minutes. Reserve 1 cup pasta water before draining.

Pat shrimp dry. Heat oil in a large skillet over medium-high until it shimmers, then add shrimp and season with Cajun spice.

Sear shrimp 90 seconds per side without stirring until opaque and edges curl slightly. Transfer to a plate.

Add cream and diced tomatoes to the same skillet, stirring to combine. Simmer 2 minutes until slightly thickened.
