Ingredients

  • 8 oz penne pasta
  • 1 lb shrimp, peeled and deveined
  • ¾ cup heavy cream
  • ½ cup canned diced tomatoes
  • 2 tsp cajun seasoning
  • ½ cup parmesan cheese, grated
  • 2 tbsp green onions, sliced

Instructions

    Boil penne in salted water until al dente, about 9 minutes. Reserve 1 cup pasta water before draining.

    Pat shrimp dry. Heat oil in a large skillet over medium-high until it shimmers, then add shrimp and season with Cajun spice.

    Sear shrimp 90 seconds per side without stirring until opaque and edges curl slightly. Transfer to a plate.

    Add cream and diced tomatoes to the same skillet, stirring to combine. Simmer 2 minutes until slightly thickened.

    Return shrimp to the pan, add cooked pasta, and toss until coated. Stir in parmesan and 0.5 cup reserved pasta water if needed.

    Taste and adjust seasoning. Divide into bowls and top with green onions.
