Ingredients
- 12 oz elbow pasta
- 1 lb crawfish tail meat, drained
- 2 cups sharp cheddar cheese, shredded
- 3 tbsp butter
- 1 cup heavy cream
- 1.5 tbsp hot sauce (Frank's RedHot or similar)

Boil pasta in salted water until al dente, about 8 minutes. Reserve 1 cup pasta water, then drain.

In the same pot, melt butter over medium heat. Add crawfish and stir until fragrant, about 1 minute.

Pour in cream and hot sauce. Stir until it simmers, then reduce heat to low.

Add cheddar slowly, stirring constantly until melted and smooth, about 2 minutes.

Stir in pasta. If sauce is too thick, add reserved pasta water a splash at a time.
