Ingredients

  • 12 oz elbow pasta
  • 1 lb crawfish tail meat, drained
  • 2 cups sharp cheddar cheese, shredded
  • 3 tbsp butter
  • 1 cup heavy cream
  • 1.5 tbsp hot sauce (Frank's RedHot or similar)

Instructions

  1. 1

Boil pasta in salted water until al dente, about 8 minutes. Reserve 1 cup pasta water, then drain.

  2. 2

In the same pot, melt butter over medium heat. Add crawfish and stir until fragrant, about 1 minute.

  3. 3

Pour in cream and hot sauce. Stir until it simmers, then reduce heat to low.

  4. 4

Add cheddar slowly, stirring constantly until melted and smooth, about 2 minutes.

  5. 5

Stir in pasta. If sauce is too thick, add reserved pasta water a splash at a time.

  6. 6

Taste and adjust with salt, pepper, and extra hot sauce. Serve hot.
