Ingredients

  • 8 oz elbow pasta
  • 1 lb crawfish tail meat, fresh or frozen (thawed)
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • ½ medium yellow onion, diced
  • 1.5 tsp Old Bay seasoning + cayenne pepper to taste

Instructions

    Boil salted water in a large skillet over high heat. Add pasta and cook until al dente, ~8 minutes, then drain.

    Return skillet to medium heat with 2 tbsp butter. Add diced onion and cook until softened, ~3 minutes.

    Pour in heavy cream and bring to a gentle simmer. Stir in cheddar until melted and smooth, ~2 minutes.

    Add crawfish, cooked pasta, Old Bay, and cayenne. Toss to coat and warm through until crawfish is hot, ~2 minutes.

    Taste and adjust seasoning. Serve hot in bowls, spooning sauce over top.
