Ingredients
- 1 lb elbow pasta
- 1 lb crawfish tails, drained
- 2 cups sharp cheddar, shredded
- 1.5 cups whole milk
- 4 tbsp butter
- 2 tsp Cajun seasoning

Boil pasta in salted water until al dente, about 8 minutes. Reserve 1 cup pasta water, then drain.

In the same pot, melt butter over medium heat. Add crawfish and Cajun seasoning, stir for 1 minute until fragrant.

Pour in milk and bring to a gentle simmer, stirring occasionally, about 2 minutes.
