Spicy Crawfish Mac and Cheese

Ingredients

  • 1 lb elbow pasta
  • 1 lb crawfish tails, drained
  • 2 cups sharp cheddar, shredded
  • 1.5 cups whole milk
  • 4 tbsp butter
  • 2 tsp Cajun seasoning

Instructions

    Boil pasta in salted water until al dente, about 8 minutes. Reserve 1 cup pasta water, then drain.

    In the same pot, melt butter over medium heat. Add crawfish and Cajun seasoning, stir for 1 minute until fragrant.

    Pour in milk and bring to a gentle simmer, stirring occasionally, about 2 minutes.

    Remove from heat. Stir in cheddar until melted and smooth, about 1 minute.

    Return pasta to the pot. Toss well, adding pasta water a splash at a time until the sauce coats each piece.

    Taste and adjust seasoning with salt, pepper, and extra Cajun spice if needed. Serve hot.
