Ingredients

  • 8 oz crab meat
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • ½ cup ice water
  • ¼ cup mayonnaise
  • 1 tsp paprika

    In a bowl, whisk 0.5 cup flour, 0.25 cup cornstarch, and 0.5 cup ice water until just combined (batter should be lumpy).

    Heat 1 inch oil in a deep skillet to 350°F. Dip 8 oz crab meat into batter, letting excess drip off.

    Fry crab pieces in batches, not crowding the pan, until golden and crispy, about 2-3 minutes per side. Drain on paper towels.
