Ingredients
- 2 cups masa harina
- 1.5 cups warm water
- 1 tsp salt
- 1 lb ground beef
- 1 medium onion
- 1 tbsp chili powder
- 2 tbsp vegetable oil

In a large bowl, mix 2 cups masa harina and 1 tsp salt. Gradually add 1.5 cups warm water, stirring until a soft dough forms. Knead for 2 minutes until smooth; cover with a damp towel.

Heat 1 tbsp oil in a skillet over medium. Add 1 diced onion and cook until soft, about 5 minutes. Add 1 lb ground beef and 1 tbsp chili powder; cook, breaking up meat, until browned, about 8 minutes. Season with salt.

Divide dough into 8 balls. Flatten each into a 4-inch disc. Place 2 tbsp of beef filling in the center, fold dough over, and pinch edges to seal. Flatten gently to 1/2-inch thick.

Heat remaining 1 tbsp oil in a large skillet over medium. Cook gorditas in batches, 4 at a time, until golden brown and crisp, about 4 minutes per side. Add more oil if needed.
