Ingredients
- 2 cups corn kernels
- ½ cup all-purpose flour
- 1 large egg
- ¼ cup milk
- 2 tablespoons fresh herbs (such as parsley or chives), chopped
- ½ teaspoon salt

In a large bowl, combine 2 cups corn kernels, 1/2 cup flour, 1 beaten egg, 1/4 cup milk, 2 tbsp chopped herbs, and 1/2 tsp salt. Stir until just combined; the batter will be thick and lumpy.

Heat a large skillet over medium heat and add enough oil to coat the bottom, about 2 tbsp. Once the oil shimmers, drop spoonfuls of batter (about 2 tbsp each) into the pan, flattening slightly with the back of the spoon.

Cook fritters for 3-4 minutes per side, until golden brown and crisp on the edges. Flip when the bottom is deeply golden and the edges look set.

Transfer cooked fritters to a paper towel-lined plate to drain. Serve warm, with extra herbs or a dollop of sour cream if desired.
