Ingredients

  • 2 pieces pork chops (boneless, 1-inch thick)
  • 1.5 cups broken rice (com tam), cooked
  • 2 whole eggs
  • 1 large tomatoes, sliced
  • 3 tbsp fish sauce
  • 2 tbsp fresh lime juice

Instructions

  1. 1

Bring a small pot of salted water to boil. Gently lower in eggs and cook 6–7 minutes until whites are set but yolks still jiggle slightly.

  2. 2

Heat a skillet over medium-high until hot. Pat pork chops dry, season generously with salt and pepper, then sear 3–4 minutes per side until golden and cooked through.

  3. 3

While pork cooks, whisk fish sauce with lime juice and 2 tbsp water in a small bowl. Set the dipping sauce aside.

  4. 4

Divide warm broken rice between two bowls. Top each with a pork chop, one soft-boiled egg, and sliced tomato.

  5. 5

Pour fish sauce dipping sauce over the top and serve immediately.
