Ingredients

  • 2 bunches collard greens
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 cloves garlic
  • 2 cups vegetable broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

    Wash collard greens thoroughly, then cut away thick stems and chop leaves into bite-size pieces.

    Heat olive oil in a large pot over medium heat; add chopped onion and cook until soft, about 5 minutes.

    Add minced garlic and cook for 1 minute until fragrant.

    Add collard greens in batches, stirring until they wilt down.

    Pour in vegetable broth, vinegar, salt, and pepper; bring to a simmer.
