Ingredients

  • 200 g cha soba (green tea buckwheat noodles)
  • 1 cup dashi (or vegetable broth)
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp wasabi
  • 2 tbsp scallions, chopped

Instructions

    Bring a pot of salted water to a boil. Add cha soba and cook until al dente, about 4-5 minutes. Drain and rinse under ice-cold water until completely chilled.

    In a small bowl, whisk together dashi, soy sauce, and mirin until the sugar dissolves. Stir in wasabi until smooth.

    Divide chilled noodles between two bowls. Pour dipping sauce into small accompanying bowls. Top noodles with scallions.

    Serve immediately. Dip each mouthful of noodles into the sauce before eating.
