Ingredients

  • 1 pound pork Cumberland sausage (coiled or long)
  • 1 large yellow onion, sliced into thin half-moons
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme leaves
  • 1 tbsp whole grain mustard (optional but recommended)

Instructions

    Heat oil in a 12-inch skillet over medium-high until shimmering.

    Coil the sausage into a spiral or lay it in a loose coil. Slide it into the pan and let it sit 3 minutes without moving — edges should brown.

    Flip the coiled sausage carefully and cook another 3 minutes until the other side is golden. Transfer to a plate.

    Add onions to the same skillet and cook over medium heat, stirring occasionally, until soft and caramelized — about 8 minutes.

    Pour in broth, Worcestershire, and thyme. Scrape up any browned bits. Return the sausage to the pan and simmer 4 minutes until sauce thickens slightly.

    Stir in mustard if using. Serve the sausage coil with the gravy spooned over.
