Ingredients
- 1.5 lb cod fillets
- 1.5 lb potatoes
- 2 medium onions
- ¼ cup olive oil
- ½ cup black olives
- ¼ cup parsley
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 400°F. Slice 1.5 lb potatoes into 1/4-inch rounds and 2 onions into thin half-moons.

In a large oven-safe skillet, heat 2 tbsp olive oil over medium. Add potatoes and onions, season with 1/2 tsp salt and 1/4 tsp pepper, and cook, stirring occasionally, until onions are soft and potatoes are slightly tender, about 10 minutes.

Nestle 1.5 lb cod fillets among the potatoes and onions. Drizzle with remaining 2 tbsp olive oil and sprinkle with 1/2 tsp salt and 1/4 tsp pepper.

Transfer skillet to oven and bake until cod is opaque and flakes easily with a fork, and potatoes are fork-tender, about 15-20 minutes.

Scatter 1/2 cup black olives over the top and return to oven for 2 minutes to warm through.
