Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 can (13.5 oz) coconut milk
  • 3 tbsp natural peanut butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1.5 cups white rice, cooked
  • ½ whole lime

Instructions

    Heat 1 tbsp oil in a large skillet over medium-high heat until shimmering, ~60 seconds.

    Add garlic and ginger, stir for 30 seconds until fragrant.

    Pour in coconut milk and stir in peanut butter until smooth, 1-2 minutes.

    Add shrimp and a pinch of salt. Simmer 4-5 minutes until shrimp turn pink and curl.

    Squeeze lime juice over the top. Taste and adjust salt.

    Divide rice between bowls and ladle stew over the top.
