Ingredients

  • 2 slices bread (thick-cut)
  • 3 large eggs
  • 1 whole avocado, ripe
  • ½ whole lemon
  • 1 pinch salt and pepper
  • 1 pinch fleur de sel or sea salt (finishing)

Instructions

    Preheat oven to 400°F. Toast bread until golden, about 3 minutes.

    Separate eggs: yolks into one bowl, whites into another.

    Cut avocado in half, remove pit, and scoop into a small bowl.

    Whip egg whites on high speed until stiff peaks form, ~2 minutes.

    Divide egg white clouds between toast pieces, mounding high.

    Bake until clouds are pale golden and set, about 5 minutes.

    Mash avocado with a fork; season with salt, pepper, and lemon juice.
