Ingredients

  • 4 whole eggs
  • 2 slices bread (thick-cut)
  • 1 whole avocado, ripe
  • ½ whole lemon or lime
  • 1 pinch fleur de sel or flaky sea salt
  • 1 pinch red pepper flakes (optional)

Instructions

    Separate eggs: whites into a bowl, yolks set aside. Toast bread until golden and crispy.

    Cut avocado in half lengthwise, remove the pit, and scoop flesh into a small bowl.

    Whisk egg whites with a pinch of salt until stiff peaks form, about 2 minutes.

    Heat oil in a medium skillet over medium-high until shimmering, roughly 1 minute.

    Gently dollop egg whites into the pan in two mounds; cook without stirring until edges brown, ~4 minutes.

    Flip clouds carefully and cook the other side until set, about 2 minutes more.

    Mash avocado with a squeeze of lime juice and a tiny pinch of salt until creamy.

    Spread whipped avocado on each piece of toast.

    Top each with an egg cloud. Sprinkle fleur de sel and red pepper flakes.
