Ingredients
- 2 slices bread (sourdough or your favorite)
- 2 whole eggs
- 1 whole avocado, ripe
- 2 tbsp olive oil
- 1 to taste salt and pepper
- ½ whole lemon, fresh (optional)

Separate egg whites from yolks; reserve yolks in a small bowl.

Whip egg whites with a pinch of salt until stiff peaks form, ~3 minutes.

Toast bread slices until light golden, ~2 minutes in a toaster.

Heat broiler to high. Divide egg white mixture between toast slices.

Broil 2–3 inches from heat until clouds are golden and puffed, ~3 minutes.

Slice avocado and arrange on top of each cloud toast.

Make a shallow well in each cloud and slide in a reserved egg yolk.

Drizzle with olive oil, season with salt and pepper, squeeze lemon if desired.
