Ingredients
- 8 whole eggs
- 4 oz fresh mozzarella, torn into bite-sized pieces
- 1 cup cherry tomatoes, halved
- ¼ cup fresh basil leaves
- 2 tbsp olive oil
- 1 pinch salt and black pepper to taste

Preheat broiler to high. Crack eggs into a bowl, whisk with salt and pepper until no streaks remain.

Heat olive oil in a 10-inch oven-safe skillet over medium-high until shimmering, about 90 seconds.

Pour in eggs, scatter mozzarella and tomato across the surface, and let cook undisturbed for 5 minutes until edges set.

Slide skillet under the broiler for 3–4 minutes until the top puffs and edges turn golden brown.

Pull from broiler, scatter fresh basil across the top, and let rest 2 minutes before sliding onto a plate.
