Ingredients

  • 2 fillets anchovy fillets
  • 1 clove garlic clove
  • 2 tbsp lemon juice
  • ⅓ cup olive oil
  • ½ cup Parmesan, grated, divided
  • 1 head romaine lettuce
  • 1 cup croutons

Instructions

    Mince the garlic and anchovies together on a cutting board until a rough paste forms.

    Whisk the garlic-anchovy paste, lemon juice, and olive oil together in a bowl until smooth.

    Stir in 0.25 cup of the Parmesan. Taste and adjust lemon or salt to preference.

    Chop or tear the romaine into bite-sized pieces and transfer to a large bowl.

    Pour the dressing over the romaine and toss until every leaf is coated.

    Divide between bowls. Top each with croutons and remaining Parmesan. Serve immediately.
