Crispy Chickpea Caesar

Ingredients

  • 1 can (15 oz) canned chickpeas, drained and patted dry
  • 4 cups romaine lettuce, chopped
  • 1 whole lemon (juiced)
  • 3 tbsp tahini
  • 2 cloves garlic, minced
  • 1 tbsp red wine vinegar

Instructions

    Toss chickpeas with 2 tbsp olive oil, salt, and pepper. Spread on a sheet pan in a single layer.

    Air fry at 400°F for 10 minutes, shaking halfway. Chickpeas should be golden and crunchy throughout.

    Whisk tahini, lemon juice, minced garlic, vinegar, and 3 tbsp water until smooth and pourable.

    Toss romaine with dressing until coated. Divide between plates and top with crispy chickpeas.
