Ingredients

  • 1 large bunch (about 8 oz) kale, lacinato or curly
  • 1.5 cups croutons, store-bought or homemade
  • ½ cup Parmesan cheese, finely grated
  • 1 whole (juiced) lemon
  • 2 cloves garlic, minced
  • ¼ cup olive oil

Instructions

    Whisk lemon juice, minced garlic, and 2 pinches of salt in a small bowl.

    Drizzle in olive oil while whisking until emulsified and creamy.

    Remove kale stems, then roughly chop or tear leaves into bite-sized pieces.

    Place kale in a large bowl and pour dressing over it.

    Massage kale with your hands for 30 seconds until leaves soften and darken.

    Toss in croutons and half the Parmesan. Taste and add salt and pepper as needed.

    Divide among bowls and top with remaining Parmesan. Serve immediately.
