Ingredients
- 1 large bunch (about 8 oz) kale, lacinato or curly
- 1.5 cups croutons, store-bought or homemade
- ½ cup Parmesan cheese, finely grated
- 1 whole (juiced) lemon
- 2 cloves garlic, minced
- ¼ cup olive oil

Whisk lemon juice, minced garlic, and 2 pinches of salt in a small bowl.

Drizzle in olive oil while whisking until emulsified and creamy.

Remove kale stems, then roughly chop or tear leaves into bite-sized pieces.

Place kale in a large bowl and pour dressing over it.

Massage kale with your hands for 30 seconds until leaves soften and darken.
