Ingredients
- 6 slices bacon
- 4 slices bread, white or wheat
- 2 tablespoons mayonnaise
- 1 medium tomato, ripe
- 4 leaves lettuce, crisp (romaine or iceberg)
- 1 pinch salt and pepper
Instructions
- 1
Lay the 6 bacon slices flat in a single layer across the bottom of a 12-inch skillet with no overlap. If they don't all fit, you will cook them in two batches.
- 2
Set the heat to medium and cook until the edges turn a deep golden-brown color and the surface looks crispy, about 8 to 10 minutes, turning each slice over halfway through cooking.
- 3
Transfer the cooked bacon to a plate lined with a paper towel to drain excess grease.
- 4
Place the 4 bread slices directly on the skillet rack over medium-high heat (or use a toaster) and toast both sides until the surface turns light golden-brown, about 2 minutes per side.
- 5
Remove the toasted bread from heat and set on a clean cutting board.
- 6
Spread 1 tablespoon of mayonnaise on the top side of each of the 2 slices that will be the top of your sandwiches.
- 7
Slice the tomato lengthwise from top to bottom into thin slices about 1/4-inch thick, then sprinkle both sides lightly with salt and pepper.
- 8
On each of the 2 bottom bread slices, layer in this order: 2 lettuce leaves, then 3 tomato slices, then 3 bacon slices.
- 9
Place each top slice (mayonnaise-side down) on top of the filling, press gently so all layers stick together, then slice diagonally from corner to corner to create two triangles.
