Ingredients
- 8 oz spaghetti
- 1 lb clams
- ½ cup white wine
- 3 cloves garlic
- ¼ cup parsley
- 2 tbsp olive oil
Instructions
- 1
Cook the 8 oz spaghetti in salted boiling water until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water before draining.
- 2
While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium. Add 3 sliced garlic cloves and cook until fragrant, about 1 minute.
- 3
Add 1 lb scrubbed clams and 1/2 cup white wine. Cover and cook until clams open, about 5-7 minutes; discard any that stay closed.
- 4
Add the drained spaghetti and 1/4 cup chopped parsley to the skillet. Toss with the clam sauce, adding reserved pasta water a splash at a time if it looks dry.
- 5
Serve immediately, spooning clams over the pasta and finishing with extra parsley if you like.
