Ingredients
- 1 lb beef sirloin or ribeye steak, cut into 1.5-inch cubes
- 4 cloves garlic, minced
- ¼ cup fresh cilantro or parsley, chopped
- 3 tbsp olive oil
- 1 whole lemon or lime
- 1 pinch coarse sea salt and black pepper to taste

Pat beef dry with a paper towel. Toss with minced garlic, cilantro, olive oil, and a pinch of salt and pepper.

Heat a 12-inch cast iron skillet over medium-high until it smokes, about 2 minutes.

Add beef cubes to the skillet in a single layer. Don't move them — let them sear 3 minutes until edges brown.

Flip each cube once and sear another 2 minutes for medium-rare. Center should feel firm but give slightly.
