Ingredients

  • 1 9 inch pre-made pie crust
  • 1.5 cups semi-sweet chocolate chips
  • 1.5 cups heavy cream
  • ½ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

    Preheat oven to 350°F. Press the 1 pre-made pie crust into a 9 inch pie dish and crimp edges. Prick bottom with a fork.

    In a medium saucepan, heat 1 cup heavy cream and 0.5 cup sugar over medium until steaming, about 3 minutes. Remove from heat and add 1.5 cups chocolate chips; let stand 2 minutes, then stir until smooth.

    In a bowl, whisk 2 eggs, 1 teaspoon vanilla, and 0.25 teaspoon salt. Slowly whisk in the chocolate mixture until combined.

    Pour filling into crust. Bake until edges are set but center jiggles slightly, 25-30 minutes. Cool completely on a rack, then chill at least 2 hours.

    With a hand mixer, whip remaining 0.5 cup heavy cream with 1 tablespoon sugar (if desired) until soft peaks form, about 2 minutes. Spread over chilled pie.

    Garnish with chocolate shavings (use a vegetable peeler on a chocolate bar). Slice and serve cold.
