Ingredients

  • 24 cookies chocolate sandwich cookies
  • 6 tbsp butter
  • 1 cup peanut butter
  • 1.5 cups powdered sugar
  • 1.5 cups chocolate chips

    Crush the 24 chocolate sandwich cookies into fine crumbs. Melt 4 tbsp butter and mix with the crumbs until well combined.

    Press the crumb mixture firmly into the bottom of a 9x9 inch baking pan. Place in the freezer while you make the filling.

    In a bowl, beat together 1 cup peanut butter, 1.5 cups powdered sugar, and the remaining 2 tbsp melted butter until smooth and creamy.

    Spread the peanut butter mixture evenly over the chilled crust. Return to the freezer for 15 minutes, until firm.

    Melt 1.5 cups chocolate chips in the microwave in 30-second bursts, stirring until smooth. Pour over the peanut butter layer and spread evenly.

    Refrigerate for at least 30 minutes, until the chocolate is set. Cut into bars and serve.
