Ingredients
- 12 large marshmallows
- 12 oz semisweet chocolate chips
- 1 tbsp coconut oil
- 2 tbsp sprinkles
Instructions
- 1
Line a baking sheet with parchment paper. Insert a lollipop stick or toothpick into each of the 12 marshmallows, pushing about halfway through.
- 2
Place the 12 oz chocolate chips and 1 tbsp coconut oil in a microwave-safe bowl. Microwave in 30-second bursts, stirring after each, until melted and smooth, about 1-2 minutes total.
- 3
Hold a marshmallow by the stick and dip it into the melted chocolate, swirling to coat evenly. Let excess chocolate drip back into the bowl.
- 4
Place the coated marshmallow on the prepared baking sheet. Repeat with the remaining marshmallows, leaving space between each.
- 5
While the chocolate is still wet, sprinkle 2 tbsp sprinkles over the tops of the coated marshmallows.
- 6
Refrigerate the marshmallows for at least 30 minutes, until the chocolate is firm and set. Serve chilled or at room temperature.
- 7
Store any leftovers in an airtight container in the refrigerator for up to 1 week.
