Ingredients

  • ¾ lb flank or skirt steak
  • 2 whole chipotle peppers in adobo sauce
  • 1 whole lime
  • 1.5 cups cooked white or brown rice
  • ¾ cup black beans, drained
  • 2 cups fresh spinach or collards
  • 2 whole eggs

    Pat steak dry with paper towels. Season generously with salt and black pepper on both sides.

    Heat 1 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear steak 90 seconds per side without moving it—center stays rare to medium-rare. Transfer to a cutting board.

    Mash 2 chipotle peppers with 1 tbsp adobo sauce and juice of half the lime. Brush onto warm steak; let rest 2 minutes.

    In the same skillet, sauté spinach with a pinch of salt until wilted, about 60 seconds. Push to the side.

    Warm black beans in the skillet, then crack both eggs into an empty spot. Cook until whites set but yolks jiggle, 3–4 minutes.

    Divide rice between two bowls. Top with sliced steak, sautéed greens, black beans, and one fried egg per bowl.
