Ingredients

  • 1 lb Chinese cured pork belly
  • 1 tbsp vegetable oil
  • 1 tsp red chili flakes
  • 1 tbsp sesame seeds
  • 1 tbsp soy sauce
  • 1 tsp sugar

Instructions

    Slice the 1 lb cured pork belly into 1/4 inch thick pieces. If very salty, soak in cold water for 10 minutes, then pat dry.

    Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the pork slices in a single layer, working in batches if needed, and cook until browned and crispy, about 4 minutes per side.

    Remove the pork from the skillet and set aside. Pour off excess fat, leaving about 1 tsp in the pan.

    Reduce heat to medium. Add 1 tsp red chili flakes and 1 tbsp sesame seeds to the skillet, stirring constantly until fragrant, about 30 seconds.

    Return the pork to the skillet. Add 1 tbsp soy sauce and 1 tsp sugar, tossing to coat everything evenly. Cook for 1 minute until the sauce glazes the pork.
