Chili Crisp Guksu Bowl

Ingredients
- 8 oz thin wheat noodles (guksu or ramen)
- 2 tbsp gochujang (Korean red chili paste)
- 1 tbsp chili crisp oil
- 1 whole cucumber
- 2 whole eggs
- 1 tbsp sesame seeds (white or black)

Boil salted water in a pot. Add noodles and cook until tender, ~4 minutes. Reserve 1/4 cup cooking water, then drain and rinse under cold water.

Fill a small pot with water and bring to a boil. Gently lower eggs into water and cook for 6 minutes until jammy, then transfer to ice water.

Slice cucumber into thin matchsticks or use a vegetable peeler to make ribbons. Set aside.

Mix gochujang and chili crisp in a large bowl. Add 2 tbsp of the reserved pasta water to loosen into a sauce.

Add cooled noodles to the sauce and toss until evenly coated, adding more pasta water if too thick.

Divide noodles between bowls. Top with cucumber, halved eggs, and a scatter of sesame seeds. Serve cold.
