- ½ medium yellow onion, diced
- 3 tbsp chile powder (or chili powder)
- 1.5 cup beef broth
- 8 count flour tortillas (6-8 inch)
- 1 cup shredded cheddar cheese

Heat oil in a 12-inch skillet over medium-high. Add diced onion and cook 2 minutes until softened.
