Ingredients

  • 1.25 lb ground beef
  • ½ medium yellow onion, diced
  • 3 tbsp chile powder (or chili powder)
  • 1.5 cup beef broth
  • 8 count flour tortillas (6-8 inch)
  • 1 cup shredded cheddar cheese

Instructions

    Heat oil in a 12-inch skillet over medium-high. Add diced onion and cook 2 minutes until softened.

    Add ground beef, breaking it apart with a spoon. Cook 5 minutes until no pink remains, stirring often.

    Sprinkle chile powder over the beef and stir constantly for 30 seconds until fragrant.

    Pour in beef broth and stir well. Simmer 3 minutes until sauce thickens slightly.

    Warm tortillas in a dry skillet or over a gas flame. Spoon beef and gravy onto each tortilla.
